Eat Fat. Lose Fat. And, Get a Healthy Heart!

Everyone wants to be lean—and healthy. Or, so I would hope. But most still unfortunately fear fat. Yet healthy fat cannot be stored as fat, because it doesn’t trigger insulin. Insulin must be present for the body to stop fat. The fact is, the more healthy fat you eat, the leaner and healthier you will be.

As a respected researcher, author, personal trainer and nutritionist (currently located in Marietta, GA), I teach my clients all about how to get as lean, as healthy, as possible. And, it’s not just about eating low carb. It’s also about eating plenty of healthy fats every meal and snack.

So, which fats do I recommend? My favorite fats are:

  • Unsalted butter
  • Coconut oil
  • Coconut butter
  • Organic mayo
  • Avocado mayo
  • Avocados
  • Raw nuts & seeds
  • Fresh/white cheese (feta, goat, mozzarella, farmer’s)
  • Heavy whipping cream
  • Sour cream
  • EVOO
  • Avocado oil
  • Ricotta cheese
  • Olives
  • Salmon
  • Chicken (dark meat)

These are my favorite—and I eat a ton every single day! I eat them not only for the fat, but also for the cholesterol. And….my body fat is only 12.4%. My waist is 25″. I never go hungry. I never deprived. My trigs range from 24 to 45. My HDL is 77. My VLDLs range from 5 to 11. And, I am 57 years young.

If one fears fat, they also fear cholesterol. So as you read this, I’m quite sure there are plenty of you who are concerned about my cholesterol. However, please, don’t be. Why? Contrary to what most experts will tell you, you need to eat healthy foods rich in cholesterol to shut down your body’s internal clock and keep it from producing its own. If you deprive your body of this vital nutrient, your body will be forced to produce its own. To avoid this health risk, you need to eat foods (at every meal) that contain cholesterol. If you don’t, your body will make cholesterol from carbs. This is not a healthy type of cholesterol. Excellent dietary sources of cholesterol-laden foods are red meat, shellfish, milk, butter, poultry, fish, cheese, and eggs. Other than the red meat and milk, I enjoy plenty of these foods, making sure I eat 3-4 with every meal.

While most sadly still fear eggs, that scare tactic was perpetuated over 40 years ago by the cereal industry—and now by big pharma. (And, no, eating Cherrios will not lower your cholesterol.) Eggs are a perfect protein, a healthy source of cholesterol—and one of the most perfect foods. Eggs are truly one of the healthiest foods there are. They’re low in calories and sodium, essentially zero carbs, and an excellent source of protein, dietary fat, and cholesterol. In addition, eggs contain a wonderful abundance of vitamins and minerals: And so I ask: With all these many benefits, how can eggs possibly be bad for us? 

Furthermore, egg whites contain the purest form of protein found in whole foods. They contain all the essential amino acids in the exact proportions required for optimum growth and maintenance of lean, metabolically active tissue. Experts use eggs as the standard when comparing other whole food proteins. Without getting too technical, they measure how efficiently the body can absorb and utilize a protein, i.e., their BV (biological value). Consequently, proteins with the highest BV will promote the most lean muscle gains. I use an egg white protein powder (versus whey), and I eat three dozen a week due to their high BV and valuable vitamins and minerals.

Reality is, anything that triggers insulin increases the overproduction of cholesterol. This list includes sugar, stress, alcohol, prescription and nonprescription drugs, OTC meds, poor diet, low fat/low calorie diets, cigarettes, lack of healthy fats and proteins, caffeine, ma huang, all stimulants, processed and refined foods, a sedentary lifestyle, excessive, and high GI carb intake equals high insulin levels, which creates the most harmful form of cholesterol. This is what increases your risks for heart disease, heart attacks, and stroke. Please, remember this. It could save your life.
